I will update if I get around to testing with the ODT as this is only for a limited number of workstations so we may just manually run the commands after build with a script. Press the Ctrl button and click the apps you choose then Move to Trash. Press Command and then click to choose all the related Microsoft Office 365 (2016) applications like Word, Excel, PowerPoint, and Outlook. 2152 (the monthly release) and it downgraded with no issues so hopefully using the ODT to download and deploy will work.
